Vinification
By pressing the dried grapes destined for the production of Vinsanto, a rich, sugar-free wine is obtained, completely free of mold or bacterial contamination, which, once arrived in the distillery, is fermented by inoculating selected yeasts. At the end of the fermentation, carefully monitored to obtain the greatest possible aromatic complexity, in addition to the development of alcohol content, proceed with distillation.
The distillation is carried out personally by Priscilla Occhipinti Distillery Master, with its steam plant; It is made in the respect of the raw material, in the necessary times, by manually executing the cut of the head and the tail at each bake. The only goal is to achieve excellence.
Aging
At the end of the distillation, the young grappa, rich in perfumes, is put to rest in wood where it remains for at least 18 months. For aging, third-choice barriques are chosen, in fact wood must allow slow grape-oxygenation, but must not cover delicate scents.
Only when the distillator decides that it is mature to be bottled, it is cut with distilled water to bring it to the desired alcoholic strength, after which it is packaged.
